Kharwas – A Traditional desi Delight
Kharwas is a unique and wholesome sweet dish from rural areas, made using colostrum milk—locally known as chick—from cows or buffaloes. This special milk is collected within the first few days after the animal gives birth and is rich in antibodies, proteins, and essential nutrients.
In rural Maharashtra, it’s common for families to share this nutrient-rich milk when a cow or buffalo calves. We follow this traditional practice to make Kharwas the authentic way.
To prepare it, we blend fresh colostrum milk with either jaggery (gul) or sugar (sakhhar) and then steam or bake the mixture until it sets into a soft, custard-like dessert. Once cooled, it’s sliced into neat pieces and served chilled.
At Paneerwala, we offer both variants—Jaggery Kharwas and Sugar Kharwas—each with its own rich, creamy flavor and natural goodness.
